 - 2018 DDSRT

I just purchased a 2021 DDSRT with 8K miles on it. This purchase was to replace a 2018 that was stolen in February. After driving the 2021 for a few days and making a few spirited runs it seams lacking in the power vs my 2018. Most notable from a dig with launch control. With my 2018 using launch control the brakes wouldn't hold it still unless I was really hammering the brake pedal and on a few with colder weather I was able to muster out a 0-60 right at 4.0 The new 2021 baseline is 4.6 0-60 and it just doesn't pull like my 2018 out of the hole.
As an FYI, the previous owner added Carven exhaust, looks like mid muffler delete and new rear mufflers/tips.
Is it possible that the tune on the new Durango is lacking something? Is there something I should be looking at to get this to the level of my 2018 Keep in mind, I would rather not void my warranty.
